CAVE AGED GRAVIERA
Produced in Crete, cave aged graviera, as the name indicates it has a special way of aging in caves. It contains mostly sheep milk and a little goat’s from selected breeds of mountainous Crete.
Based on the traditional recipe and the unique maturation and aging process in caves, we create a cheese with ultimate flavor for the most demanding consumers.
Combine it with rose xinomavro wine. Makes an ideal combination with multigrain bread, nuts and thyme honey.
GRAVIERA AGED IN WINE
A unique graviera in red wine from Crete. It is made mostly with sheep milk, giving a rich flavor while its uniqueness is based in the amazing combination of cheese and wine that offers a charming effect.
Aged graviera in red wine, slowly ages in wine lees from selected xinomavro wine variety. It has rich aroma and taste, strong and daring character.
Combine it with red xinomavro wine along with baked bread, cherry tomatoes and walnuts.
CRETAN DRIED WINE CHEESE
Another amazing cheese from Crete with an explosive combination, since it contains goat milk collected from selected herds of Crete and lees of xinomavro traveling exclusively for us from Amyntaio in Florina.
Unique product based on the combination of buttery and aromatic dry cream cheese with red wine. With a special recipe based on an original idea, dry anthotyros is baptized in lees from xinomavro and acquires unique texture and wine aromas.
Cretan dried cheese in wine stood out immediately since as soon as we released it, it was granted with the Silver Quality Award.
A special cheese like this, which emerges aromas of wine, is ideally accompanied with a rosé wine from Xinomavro.
We recommend rusks of oil, seasonal fruit and citrus marmalade to combine it with.
SYROS ISLAND GRAVIERA
The magic of the cheeses produced worldwide, and specifically the Greek ones, is that they enclose flavors and aromas of each place. Syros island graviera, takes us to the cosmopolitan island of Syros which is produced exclusively from cow’s milk collected from selected herds on the island.
Based on a modern recipe this graviera maturates slowly for 10 months with ideal conditions in order to obtain its special and famous flavor, but also its great aromas.
Combine it with assyrtiko white wine. Makes an ideal combination with yeast bread, wild arugula and raisins.
SAN MICHALI CHEESE P.D.O.
San Michali cheese is produced exclusively in the island of Syros. It contains only cow’s milk collected from local breeds of the island as this provides the production process as a Protected Designation of Origin.
San Michali has a spicy flavor and golden skin. Its mass is solid, with irregular holes and cutting crumbles like parmesan. The annual quantity production on the island is quite limited since each kilo of cheese takes 10 pounds of milk.
It is this rich milk content that gives San Michalis rich hazelnut and other nuts aromas from the specific flora of the island and the imaginary trip to Syros is inevitable in every bite.
AGED GRAVIERA WITH FOUR PEPPERS
Aged graviera with 4 peppers is produced in Crete and contains mostly sheep milk and a little goat’s from selected breeds of mountainous Crete.
A unique cheese with an extraordinary combination of 4 peppers. With a special recipe and technique, aromatic pepper corns are mixed with the cheese giving it an intense and piquant flavor without, however, cover the aromas of the cheese.
Combine with agiorgitiko red wine. Makes an ideal combination with wholegrain bread and tomato chutney.
AGED GRAVIERA WITH SAVORY
Another amazing aged graviera from Crete. Here also Cretan sheep's milk overrides, giving away its aromas.
Special savory gathered in Crete, is added to the cheese allowing its aromas to enrich it with a slightly spicy flavor.
It fits very nicely with white wine Malagouzia accompanied by pies, sun-dried tomatoes and olive oil.
AGED GRAVIERA WITH BLACK TRUFFLE
Black truffle graviera is produced in Viotia and contains exclusively sheep milk from selected breeds of the area and black truffle collected in the mountains of Chalkidiki.
A unique product based on the strong combination of cheese with the aromatic truffle. Thanks to its special recipe, chopped black winter truffle kneaded by hand in the graviera and thus, cheese acquire rich truffle aromas that persist on the palate while keeping its character thanks to its high quality sheep's milk.
Combine it with aged red xinomavro wine. Makes an ideal combination with barley rusk, arugula and onion chutney.
A modern cheese with special and dominant flavor and rich aromas.
AGED GRAVIERA WITH THYME
Aged graviera with thyme is produced in Crete containing mostly sheep milk and a little goat’s from selected breeds of mountainous Crete.
With a special recipe Cretan thyme is added to the cheese giving a special character and fits excellent with aromas of graviera.
Combine it with white wine from Roditis variety. Makes an ideal combination with Cretan breadsticks, olives and olive oil.
